Victor's is Ostend's new hotspot

After secondary school, Gilles spent a year studying at Ter Duinen. "I graduated as both a chef and a waiter. But becoming a chef wasn't for me – I couldn't see myself working in such a confined space all the time. And I also preferred not to serve someone else's creations. Since I've always been fascinated by drinks, I decided to become a bartender. I started at the Casino as a student worker and ended up staying," he says.

The cocktails Gilles creates go beyond the classics. He also develops his own signature recipes. In 2015, one of his original creations was selected among the world's 300 best entries in a cocktail competition organised by a cognac brand.

At the beginning of 2021, the opportunity arose to take over a hospitality venue on Oosthelling, next to the Kursaal. "I didn't hesitate," he says. "In March, I contacted interior designer Chris De Neve of reverence. He succeeded in creating the interior I'd always dreamed of: a classic style with Art Deco influences and turquoise accents. By the end of December, the renovation was complete and we were ready to open."

Savoir vivre

Victor's Boutique Bar has become a cosy, elegant lounge bar. "The concept really appeals to people; there was nothing like it in Ostend. Guests can come here for an aperitif before dinner or enjoy a nightcap afterwards. My customers appreciate a certain savoir vivre and enjoy good conversation over an exceptional drink," Gilles explains.

The menu features premium champagnes, luxury spirits and expertly crafted cocktails. "I only work with top brands such as Veuve Clicquot, Dom Pérignon, Hennessy, Belvedere Heritage and Blind Tiger. Alongside the classic cocktails, we also serve more distinctive creations such as the Heavenly Nectar, Amarena Cheeks, Mood Indigo, Rag Doll, Lady Marmalade and our signature cocktail, the Moon Glow."

Gilles' passion for drinks and commitment to quality also influenced his choice of an AQUALEX Fine Touch tap, providing chilled, sparkling and hot water. "Chris was the one who suggested it. I immediately liked the idea because the tap saves me a lot of space in my refrigerators, which is a major advantage since I have very limited storage. It's also a beautiful feature in the bar. My visit to the AQUALEX showroom didn't take long because I was convinced almost immediately," he laughs. "We chose a brass model, a stylish detail that ties in with the rest of the interior. I'm also very happy with the service. Steven, who has a background in hospitality himself, gave us excellent advice, and the technician who installed the tap was flexible and really thought along with us."
